    These smooth mashed potatoes have a secret ingredient that makes them lower in calories and very smooth.

    List of Ingredients




    1 lb. (about 3 small red potatoes, cut into chunks (do NOT peel)
    1 c. bite-sized cauliflower florets (use fresh or frozen)
    1/2 c. sour cream (can used low or fat-free)
    1 c. cheddar cheese (can use low fat)

    Recipe



    Place potatoes and cauliflower in large saucepan. Add enough water to cover. Bring to a boil on high heat. Reduce to medium and simmer for 20 minutes or until vegetables are tender but not mushy. Drain; return to pan. Add sour cream; mash until vegetable mixture is light and fluffy. Stir in cheese.

    Microwave directions: (Not any faster but it uses less energy and doesn't heat up the house!)
    Place potatoes and cauliflower in large microwaveable bowl; add water to cover. cover bowl with waxed paper. Microwave on high 20 minutes or until vegetables are very tender. Continue as directed.
