    2 lb. Yukon gold potatoes (about 5 medium), unpeeled, cubed
    1/4 c. milk
    2 oz. Velveeta, cut-up
    1 green onion, thinly sliced

    Recipe



    Place potatoes in large saucepan. Add enough water to cover the potatoes. Bring to a boil on medium-high heat. Reduce heat to medium-low and simmer for 15 minutes or until potatoes are tender. Drain potatoes; return to saucepan. Mash potatoes until light and fluffy, gradually adding milk alternately with Velveeta. Sprinkle with the green onions.

    Variations: Stir in 1/4 c. cooked real bacon pieces
