There's nothing quite like fresh homemade pickles. Everyone will love these.
List of Ingredients
3 Pounds Firm Cucumbers
2 Pounds Small White Onions
1/3 Cup Salt
2 1/2 Cups Vinegar
2 1/2 Cups Water
2 Cups Sugar
2 Teapoons Celery Seed
1 1/2 Tablespoons Whole Mustard Seed
1 Teaspoon Turmeric
4 Large Sweet Red Peppers, Coarsely Cut
Recipe
Peel and slice cucumbers and slice onions. Place in large bowl. Add salt, mix well and let stand overnight. Drain in colander. Place under water to wash out salt. Press out excess liquid. In a 5 or 6 quart kettle, combine vinegar, water, sugar, celery seed, mustard seed and turmeric; bring to a boil. Add cucumbers, onion and red sweet peppers. Bring to a boil. Boil about 15 minutes or until cucumbers and onions are clear. Pack in jars and seal. Process in boiling water bath 5 minutes. Makes about 7 pints.
