Here's the best chow chow recipe ever. This is the old Virginia recipe (over 100 years old). This is canning quantity.
List of Ingredients
3 1/2 Pounds Cabbage, Ground
8 Pounds Green Tomatoes, Ground
3 Pounds Onions, Chopped
3 Red Bell Peppers, Chopped
2 Bunches Celery, Chopped
3 Pints Vinegar
3 Pints Sugar
1/2 Cup Mustard Seed
1/2 Teaspoon Ground Cinnamon
1/2 Teaspoon Ground ClovesRecipe
Combine cabbage, green tomatoes, onions, bell peppers and celery with 1/2 cup salt; let stand overnight. Drain well. Combine mixture with 3 pints vinegar, 3 pints sugar and 1/2 cup mustard seed. Cook 1/2 hour; heat throughout. Five minutes before removing from heat, add 1/2 teaspoon ground cinnamon and 1/2 teaspoon ground cloves. Seal in scalded jars. Yields 8 to 11 pints.
