    Here's a bread pudding recipe with a Mexican flair. Great when served warm with ice cream or whipped topping.

    List of Ingredients




    2 Cups Water
    1 Cup Packed Dark Brown Sugar
    3/4 Teaspoon Ground Cinnamon
    2 Tablespoons Butter
    6 Slices Toast
    1/2 Cup Raisins
    1/2 Cup Almonds, Chopped
    2 Apples, Peeled, Cored And Sliced
    1/2 Cup Montery Jack Cheese, Shredded

    Recipe



    In medium saucepan, bring the water, brown sugar and cinnamon to a boil. Reduce heat and simmer uncovered 3 minutes. Stir in butter. Cut toast in 1 inch pieces; fold into the sugar mixture along with the raisins and nuts. Place half of the mixture in bottom of 8 inch square baking dish; top with apples, then remaining toast mixture. Cover and bake in 350 degree oven for 20 minutes. Uncover and sprinkle with cheese. Bake, uncovered, 20 minutes more or until apples are tender. Yields 6 servings.
