List of Ingredients
1 Cup Seedless Raisins
1/3 Cup Shortening
3/4 Cup Granulated Sugar
1 Egg
1 1/2 Cups Sifted All-Purpose Flour
3 Teaspoons Baking Powder
1/2 Teaspoon Salt
1/2 Cup Milk
1 Teaspoon Vanilla ExtractRecipe
Chop raisins. Cream shortening and sugar together. Add egg and beat well. Sift flour with baking powder and salt. Add to creamed mixture alternately with milk. Blend in vanilla and raisins. Fill greased muffin pans about 2/3 full. Bake in moderately hot oven (375 degrees) 25 to 30 minutes. Let stand for 5 to 10 minutes. Yields about 14 muffins.
