These cookies are perfect for the holidays. Make up several batches and give a tin of cookies to your friends.

    List of Ingredients

1 Cup Butter Softened (No Substitutes)
    2 Cups Packed Brown Sugar
    2 Eggs
    1 Teaspoon Vanilla Extract
    3 1/2 Cups All-Purpose Flour
    1 Teaspoon Baking Soda
    1/4 Teaspoon Salt
2 Cups Chopped Black Walnuts, Divided

    Recipe

In a mixing bowl, cream the butter and brown sugar. Beat in eggs and vanilla. Combine flour, baking soda and salt; gradually add to the creamed mixture. Stir in 1 1/4 cups of walnuts. Finely chop the remaining nuts. Shape dough into two 15 inch logs. Roll logs in chopped nuts, pressing gently. Wrap each in plastic wrap. Refrigerate for 2 hours or until firm. Unwrap and cut into 1/4 inch slices. Place 2 inches apart on greased baking sheets. Bake at 300 degrees for 12 minutes. Cool on wire racks. Yields 10 dozen cookies.
