Vanilla Cream Filling For Puffs/Eclaires

This is the filling for the puff or eclaire shells listed here. A great party treat or anytime snack.
List of Ingredients
3 Cups Milk
1/2 Cup Flour
3/4 Cup Sugar
1/4 Teaspoon Salt
3 Eggs
1 1/2 Teaspoons Vanilla
3/4 Cup Heavy Cream, WhippedRecipe
Scald milk and add to mixture of flour, sugar and salt. Cook over hot water in double broiler until thick, stirring constantly. Cover and cook for 5 minutes. Pour mixture slowly into beaten eggs. Return to double boiler and cook 2 minutes, stirring briskly. Add vanilla and whipped heavy cream. Chill. If shells are not to be filled immediately. add whipped heavy cream just before filling. Makes enough filling for 12 shells.
