    Beef And Vegetable Stir-Fry

    One of my favorite oriental dishes. This is great to serve family and friends when you're looking for a special treat.

    List of Ingredients

    1 Pound Boneless Round Steak
    3/4 Pound Small Fresh Mushrooms
    1 Small Bunch Fresh Broccoli
    2 Tablespoons Vegetable Oil
    4 To 5 Carrots, Diagonally Sliced
    1/4 Cup Soy Sauce
    2 Tablespoons Cornstarch
    1/2 Teaspoon Sugar
    1 1/2 Cups Beef Broth
    Hot Cooked Rice

    Recipe

    Partially freeze steak; slice across grain into 3" by 1/4" strips; set aside. Rinse mushrooms and remove stems; reserve stems for use in another recipe. Set mushroom caps aside. Wash broccoli and remove flowerets; reserve stalks for use in another recipe. Set flowerets aside. Heat oil in pre-heated wok, coating sides. Allow to heat at medium high (325 degrees) for 1 minute. Add steak; stir-fry until browned. Add mushrooms, carrots and soy sauce, stirring well. Cover; reduce heat to low (250 degrees) and cook 10 minutes. Add broccoli, cover and cook 5 minutes or until tender-crisp. Combine cornstarch, sugar and beef broth, mixing well; add to meat mixture. Cook, stirring constantly, until thickened. Serve over rice. Yields 6 servings.
