Colorful Linguine Salad

This is a wonderful low-fat salad that your entire family will love. A great dish after a day in the summer sun.
List of Ingredients
1 Medium Zucchini, Thinly Sliced
1/2 Cup Julienned Carrots
1/2 Cup Fresh Pea Pods
3 Cups Cooked Linguine
3/4 Cup Julienned Sweet Red Pepper
DRESSING:
3 Tablespoons White Wine Vinegar
2 Tablespoons Olive Oil
2 Teaspoons Dijon Mustard
1 Garlic Clove, Minced
1 Teaspoon Sugar
1 Teaspoon Dried Thyme, Optional
1/2 Teaspoon Salt
1/4 Teaspoon White PepperRecipe
Place zucchini and carrots in a steamer basket; place in saucepan over 1 inch of water. Bring to a boil; cover and steam for 2 to 3 minutes. Add pea pods; steam for 1 minute. Transfer vegetables to a large bowl; add linguine and red pepper. In a small bowl, whisk together the dressing ingredients. Pour over linguine mixture and toss to coat. Cover and refrigerate for 1 hour or until serving. Yields 4 servings.
