This is a fabulous version of a classic salad. The orange and nutmeg flavors highlight this year-round salad.
List of Ingredients
4 Cups Grated Carrots (About 5 Medium)
8 1/4 Ounces Fresh Pineapple, Crushed
1/2 Cup Raisins (Packed)
Dressing:
1/2 Teaspoon Salt
2 Tablespoons Sugar
1/4 To 1/2 Teaspoon Nutmeg
1 To 2 Teaspoons Grated Orange Peel
1 Tablespoon Plus 1 Teaspoon Lemon Juice
1 Cup (1/2 Pint) Sour CreamRecipe
Combine salt, sugar,nutmeg, orange peel, lemon juice and sour cream; refrigerate to blend flavors. Fold carrots, pineapple and raisins into dressing. The dressing becomes light and bubbly. Yields 8 servings.
