    I love zucchini and I love tomatoes so why not mix them together. This is a wonderful salad that the whole family will love.

    List of Ingredients




    1/3 Cup Salad Oil
    1/4 Teaspoon Salt
    1 Pint Cherry Tomatoes, Halved
    2 Small Zucchini, Thinly Sliced
    1 Small Onion, Thinly Sliced
    1/3 Cup Blue Cheese, Crumbled
    2 Tablespoons Red Wine Vinegar
    1/8 Teaspoon Pepper
    Lettuce

    Recipe



    In large bowl, mix oil, vinegar, salt and pepper. Add tomatoes, zucchini, onion and blue cheese; toss lightly. Cover and chill. To serve, toss and spoon onto lettuce leaves. Yields 6 servings.
