Baked Tomatoes With Mushrooms

I love baked tomatoes but this recipe adds even more. Mushrooms and a little basil make this dish fabulous.
List of Ingredients
3 Tablespoons Peanut Oil
1 Garlic Clove, Crushed
1 Teaspoon Minced Fresh Basil
1 Tablespoon Butter
1/2 Pound Fresh Mushrooms, Chopped
Salt And Pepper To Taste
4 Large Tomatoes, Ripe But Firm
2 Teaspoons Sugar
1/2 Cup Fine Dry Bread Crumbs
Recipe
Heat 1 tablespoon of the oil. Add garlic and basil to the hot oil, stirring over low heat until garlic starts to brown lightly. Add the butter; when hot, pour in mushrooms. Stir quickly over high heat for 2 minutes, then remove from heat. Add salt and pepper to taste. Cut tomatoes into halves. Sprinkle each half with 1/4 teaspoon sugar and lots of pepper but no salt. Mix bread crumbs with remaining 2 tablespoons oil and spread on the cut surfaces of the tomatoes. Bake in a 425 degree oven for 20 minutes. Pour the mushroom mixture over the tomatoes. Yields 4 servings.
