    List of Ingredients


    • 3 baked or microwaved potatoes, skinned and diced**
    • 1/2 green Bell pepper
    • 1/2 small onion
    • 8 oz cooked bacon
    • 4 oz. Cheddar cheese, grated
    • 4 eggs


    Instructions


    1. Cook potatoes and bacon. Dice pepper and onion. Coat 9" (botom of)skillet with bacon grease. Cook pepper, potatoes and onion til browned on one side, turn. Add salt and pepper to taste--add bacon grease as needed.
    2. Crack eggs over skillet. Cook until eggs are "set". Top with bacon. Top with cheese and allow to melt.


    Final Comments


    **I have used frozen Hash browns for this. Don't remember how much, exactly, but approximately 1-1/2 cups. Use your best judgement for the amount to equal the potatoes.
