    You can even make this dish on the stove in a large pot. It still will cook all day long, though.


    List of Ingredients


    • 1 pound dry pinto beans
    • 3 pounds Pork Roast ( I used Boston Butt)
    • 7 cups water
    • 1/2 cup onion, chopped ( I used a whole medium onion, chopped)
    • 2 cloves garlic, minced
    • 1 Tbsp salt
    • 2 Tbsp. chili powder
    • 1 Tbsp cumin
    • 1 tsp oregano
    • 4 oz can chopped green chile peppers


    Instructions


    1. Spray crockpot with cooking spray. Put all ingredients in Crockpot, starting with beans, seasonings, onions and chiles, with the roast on top, then add as much water as will go in. I had to add water as it cooked and the beans absorbed water when I used the 4 quart crockpot. When I used the 6 quart crockpot, everything fit at once. Cover; cook on low 8-10 hours or until roast falls apart and beans are done. Uncover and cook about 1/2 hour until desired thickness is achieved.
    2. Serve with rice, and/or cornbread. I always serve it with sour cream and salsa to garnish.


    Final Comments


    I recommend using a 6 Quart crockpot for this recipe. It is kind of a full pot if you use a 4 quart one.
    Also, mine was done in 5 hours on low.
