Lemon Meringue Pie

Recipe Introduction
This is a very delicious, refreshing pie. Worth the little effort involved!!
List of Ingredients
- 4 eggs, seperated
- 1 cup sugar
- 2 Lemons
- 1/8 tsp salt
Instructions
- Beat egg yolks slightly, add lemon juice, 1/2 cup sugar and 1/8 tsp. salt. Cook until thick (I add 1 tsp. water to juice)--Let cool. Beat egg whites until stiff, gradually adding 1/2 cup sugar. Fold half of the meringue into lemon filling--Pour into Pre-cooked Pie shell. Spread on rest of meringue and brown in a slow oven (250-300 degrees).
Final Comments
My husband liked this pie still warm, but I thought it tasted better after refrigeration.
