Santa Fe Soup

Recipe Introduction
This is a delicious and quick soup to make! I serve it with a dollop of sour cream on top.
List of Ingredients
- 1 pound ground beef
- 1 pound Processed cheese (like Velveeta), cubed
- 1 onion chopped
- 1 (14.5 oz) can peeled and diced tomatoes
- 1 (10 oz) can diced tomatoes with green chiles
- 1 (15.25 oz) can whole kernel corn
- 2 (15 oz) cans Ranch-style beans
Instructions
- Brown ground beef and drain off fat.
- In a large stock pot combine all ingredients. Simmer on low heat until the cheese is melted and the onion is tender.
Final Comments
I usually mix everything together EXCEPT the cheese and let it simmer for at least an hour. Then about 10 minutes or so, before serving, I add the cheese and stir until it's completely melted. DO NOT turn up the heat or it will scorch the cheese!!
