    PICKLED HERRING

    Recipe Introduction

    My great uncle has won local contest for his pickled herring.

    List of Ingredients

    12 salt herring, skinned
    1/2 c. brown sugar
    1/2 c. water
    1 tsp. whole pepper
    Few whole cloves
    Few bay leaves
    1 1/2 c. vinegar
    Lemon slices
    Onion slices

    Recipe

    Skin, bone and put herring to soak overnight. Drain. Boil sugar, water, cloves, peppers and bay leaves for 5 minutes and cool. Add 1 1/2 cups vinegar. Put a layer of herring, then a layer of sliced onion, a few slies of lemon and so on until all herring is used. Pour vinegar and spices over the mixture. Let stand a day or so before serving. Keep in a cool place. Makes 2 pints.
