    Can be made a day ahead and feeds a large crowd.

    List of Ingredients




    4 slices bacon
    1/2 lb. dried beef, chopped
    4 oz. canned mushrooms, drained
    1 lg. green pepper, chopped
    1 cube butter, divided
    1/2 c. flour
    1 quart milk
    1/4 tsp. pepper
    16 eggs
    1 c. evaporated milk
    Salt, to taste

    Recipe



    Saute bacon and remove from skillet. Add beef, mushrooms (reserving some for garnish), green peppers, and 1/2 cube butter to bacon drippings. Stir in flour, 1 quart milk and pepper; cook slowly until misture thickens to a cream sauce consistency. Mix eggs with evaporated milk; season with salt, and scramble in remaining butter. In a 3 quart casserole alternate layers of sauce and eggs, beginning and ending with sauce. Eggs must be completely covered with sauce. Garnish with mushrooms. Bake covered at 275 degrees F. for 1 hour. May be prepared a day ahead and refrigerated. Serves 12.
