    POTATO LEFSE

    Source of Recipe

    OLGA J BJORN/KATERINA KNORR

    Recipe Introduction

A traditional Norwegian recipe from an excellent Norwegian cook.

    List of Ingredients

    3 c. mashed potatoes
1/2 c. rich cream or can milk
    1/2 tsp. salt
    1/4 tsp. baking powder
    1/2 c. butter or margarine
    1 1/2 c. flour, no more

    Recipe

Heat cream and butter, stir into potatoes. Let stand overnight. Add flour, salt and baking powder to potato and butter mixture. Roll out as for pie crust with a corrugated rolling pin on pastry cloth and bake on top of griddle, turning them when blisters form. Usa as little flour as possible for best results. Makes about 20 (10 inch) lefse. Bake quickly at 450 to 475 degrees F. Spread butter, cinnamon, sugar on and roll up and eat. YUM.
