    Basic Microwave Polenta

    Makes a substitute for potatoes.


    List of Ingredients


    • 2 3/4 cups water
    • 3/4 cup yellow cornmeal
    • 1/4 tsp. salt


    Instructions


    1. In a 3-quart microwave-safe bowl, with wire whisk, beat water, cornmeal & salt.
    2. Cover and microwave on high, 100%, for 9 minutes, beating every 3 minutes until smooth
    3. Remove cover and microwave on hight 8 minutes longer, beating midway & at end until well combined.
    4. Spread polenta into 9" square baking pan or pie plate; let polenta cool to room temperature, then refrigerate.
    5. (Dried spices of your choice may be added to the mixture before cooking.)


    Final Comments


    To serve, cut polenta into squares,& saute in small amount of oil or heat on the grill.
