1 1/2 C water-2 C chopped dates(8oz)-1 3/4 tsp baking soda
1/4 lb + l T unsalted butter
1 3/4 C + 1 T all-purpose flour
4 T unsweetened cocoa
1/2 tsp salt
1 1/2 C granulated sugar
2 eggs
1 tsp vanilla
3 C semisweet chocolate chips
1 C walnut pieces
Recipe
Preheat oven 325F - Bring water to boil, combine dates with 1 tsp baking soda - pour water over - set aside.
Prep 9x13x2"cake pan w/lT butter & 1T flour - set aside.
Combine 1 3/4 flour, cocoa, remaining baking soda & salt,
sift - set aside.
Combine 1 C sugar & remaining butter (4 oz) - beat med. 2 min. Scrape down - beat high 1 min. Add eggs one at a time - beat high 15 min. ea. Then, beat high 2 min. more.
Scrape down bowl - add vanilla - beat med. 15 seconds. Add sifted flour mixture on low 20 seconds. Add cooled date mixture - beat low 20 seconds / med 10 seconds. Should be nice and creamy.
Pour into prepared pan spread evenly / sprinkle remaining sugar(1/2 C)over top of cake - Bake in center of oven for 20 min. Remove from oven sprinkle chocolate chips evenly over top, then sprinkle walnut pieces. Should be piled high.
Bake for an additional 20-25 min. until toothpick inserted in center of cake comes out clean.
Remove cake from oven - cool room temp. - refrigerate at least 15-20 min. Slice and serve with favorite ice cream...Yummy!!
