Almond Poppy Seed Muffins

3/4 cup sugar
1/4 cup soft butter
1 1/2 teaspoons almond extract
1/2 teaspoon grated lemon rind
2 eggs
2 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/2 cup chopped almonds -- optional
5 tablespoons poppy seeds
Cream sugar, butter, lemon peel and almond extract. Add eggs, one at a time, beating well.
Combine flour, baking powder and salt. Add to creamed mixture alternately with milk, beating well after each addition.
Fold in nuts and raisins, beating well after each addition.
Spoon into greased muffin tins, filling 3/4 full. Bake at 400° about 20 minutes.
