One Pot Mac and Cheese

3 tablespoons butter or margarine
1/2 cup chopped onion, or 1/4 c. dried -- chopped onion (opt)
2 cups macaroni
2 cups water
1/4 teaspoon dry mustard
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons flour
1 can evaporated milk -- or 2 c. milk
2 cups shredded or cubed cheddar cheese -- sharp is best
Melt butter and stir in macaroni and onion. Saute a few minutes until onion begins to cook.
Add water and boil for 7 minutes. Sprinkle with flour, dry mustard, salt and pepper.
Add milk and cheese. Stir until cheese melts. If you like it creamy, it's done. If you like it "baked", leave it on low heat for a bit.

This is a lot like baked mac and cheese, only soo-oo-o much easier.
