Indonesian Satay Sauce

2 teaspoons vegetable oil
1 cup finely chopped onion
4 cloves garlic -- minced
2/3 cup cider vinegar
1/2 cup molasses
1/2 cup soy sauce
2 teaspoons hot pepper flakes
2 teaspoons ginger root -- peeled and minced
1/2 cup peanut butter
Heat oil in nonstick pan and saute onion and garlic over medium-high heat for 3 minutes or until tender, stirring frequently.
Add vinegar, molasses, soy sauce, pepper flakes and ginger. Bring to a boil; reduce heat and boil gently for 5 minutes. Blend in peanut butter and boil gently for one more minute.
Ladle into clean, hot jars, leaving 1/2 inch head space. Process half-pints in a boiling water bath for 20 minutes.
