Jalapeno Pepper Jelly

1/2 cup chopped red bell pepper***
1/2 cup chopped yellow bell pepper***
7 chopped jalapeno peppers -- no seeds
1 1/4 cups cider vinegar
6 cups sugar
2 packages liquid pectin -- 6 oz.
2 tablespoons lime juice
Combine all ingredients except pectin and lime juice in a large saucepan. Bring to a rolling boil. Remove from heat and let stand 30 minutes. Return to high heat and boil for two minutes. Add pectin and boil one minute. Remove from heat. Add lime juice. Pour into jars. Process ten minutes in boiling water bath.
***Note: I used 1 c. red pepper and no yellow peppers to make this for Christmas, and left some of the jalapeno seeds in for a little more zip. Beautiful on Jalapeno Cheesecake.
