    This is very tasty...would be good on burgers, mixed with sour cream for potato chip dip, or dumped on cream cheese and served with crackers.

    Lotsa Peppers Relish

    3 cups prepared peppers -- (2 medium red peppers, 2 medium green peppers, 10 large jalapenos)
    1 cup cider vinegar
    5 1/4 cups sugar
    1/2 teaspoon butter or margarine
    1 pouch liquid fruit pectin -- (3 oz.)

    Stem and halve red peppers; discard seeds. Finely chop or grind and measure one cup into 6 or 8 quart saucepan.

    Stem and halve green peppers; discard seeds. Finely chop or grind and measure one cup. Add to saucepan.

    Stem and halve jalapeno peppers; discard seeds. Finely chop or grind and measure one cup. Add to saucepan.

    Add vinegar.

    Prepare jars according to manufacturer's directions. Keep jars hot until ready to fill.

    Mix sugar thouroughly into peppers. Add butter. Place over high heat; bring to a full, rolling boil and boil, stirring constantly. Immediately stir in pectin. Bring to a full rolling boil and boil for one minute, stirring constantly. Remove from heat; skim off foam with metal spoon.

    Ladle into prepared jars, leaving 1/4" headspace. Wipe jar rims and threads and cover with two-piece lids.

    Process in boiling water bath for 15 minutes. Cool; remove rings for storage.
