Mixed Fruit Mincemeat

1/2 pound dried apricots -- chopped
1/2 pound dried cranberries
1/2 pound dried dates -- chopped
1/2 pound golden raisins
1/2 pound dark raisins
2 cups or more apple cider
1 cup brandy -- (I've also used rum or White Christmas, a rum/brandy mix)
1 pound tart apples
1 pound firm-ripe pears
1/2 cup orange juice
1/4 cup lemon juice
3 tablespoons orange zest
2 tablespoons lemon zest
3 cups brown sugar
1 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon allspice
1/2 teaspoon nutmeg
Combine dried fruits, apple cider and brandy. Stir until well combined. Cover and set aside for 24 hours, stirring occasionally.
Peel, core and chop apples and pears. In a large pan combine apples, pears and remaining ingredients and stir until well blended. Add dried fruit mixture. Bring to a boil over medium heat, stirring frequently. Reduce heat and simmer until apples are tender, about 40 minutes. Add more cider or brandy if necessary.
Ladle into hot jars, leaving 1/2 inch headspace. Remove air bubbles. Apply 2 piece caps and process in a boiling water bath, pints and quarts for 30 minutes.
Yields about 7 pints.
