    Pear Salsa

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 c white vinegar
    8 c firm pears, peeled, cored -- and coarsely chopped
    2 sweet red peppers -- chopped
    2 green bell peppers -- chopped
    4 jalapeno peppers -- chopped,or to taste
    1/2 c sugar
    2 tbsp pickling salt
    1 tsp cumin
    1 tsp black pepper

    Simmer until thickened 45 minutes to one hour. Process half pints 15 minutes at 0-1000 ft., 20 minutes at 1000-6000 ft., and 25 minutes over 6000 ft. Makes about 7 half pints.

    Notes: This is a work in progress...it started out as a recipe from a canning site, but I didn't care for it, so tweaked it until I came up with something edible.
