Potatoes Elegante

1 1/2 pounds (3-4 large) potatoes -- cooked and sliced
salt and pepper -- to taste
1 cup shredded Monterey jack cheese
1 cup shredded cheddar cheese -- * see note
3 tablespoons butter
1 cup chopped onions -- **(I use 1-1/2c.)
1 cup sour cream -- (I use 1-1/2 c.)
2 eggs
paprika
Saute onions in butter until golden.
In a deep, oiled casserole dish, layer 1/2 potatoes (sprinkle with salt and pepper), 1/2 onions and 1/2 jack and cheddar cheeses. Repeat layers.
Beat sour cream and eggs. Pour over top. Sprinkle with paprika.
Bake @ 375° for 40 minutes.

NOTES :
*The original recipe called for Monterey Jack cheese and Romano cheese.
**Sometimes I use a LOT of caramelized onions and add an extra egg.
