1 lb. ground beef
1 can chili beans
1 envelope taco seasoning
2 c. nacho cheese Doritos, crumbled
2 c. shredded cheddar cheese
Lettuce
Tomato
Sour cream
Place ground beef in a microwave-safe dish, cover and cook on high for three minutes. Stir. Continue cooking covered on high for an additional three to five minutes, or until no longer pink. Drain. Stir in chili beans and taco seasoning.
In a large microwave-safe platter, layer half of the Dorito crumbs, half of the meat mixture and half of the cheese. Repeat layers. Cover and cook on 80 percent power for three to five minutes, or until cheese is melted, and casserole is heated through.
Let stand two to four minutes before serving.
Serve with lettuce, tomatoes and sour cream, if desired.
To cut the fat in this recipe, try using ground turkey instead of ground beef. For a different taste, try using chicken and adding a can of drained corn to the meat mixture. The chicken variation would also be lower in fat than the original recipe.
This recipe can also be adjusted to fit your spice preference. For those who like to breathe fire, use hot chili beans along with hot taco seasoning. You can even add a couple of sprinkles of cayenne pepper! For those with milder tastes, simply use mild chili beans along with mild taco seasoning for a nicely seasoned dish without overpowering heat.
If you don't have any cheddar cheese on hand, try substituting monterey jack cheese for excellent results.
