    Basic Bread Dough - One Loaf

    3 1/2 cups flour (may need a little more)
    1 1/2 tablespoons sugar
    1 1/4 teaspoons salt
    1 1/4 teaspoons dry active yeast
    1 cup skim milk (or part milk and part water)
    1 1/2 tablespoons butter

    Heat milk until warm but not hot. Add butter and let melt. Set aside.

    Place flour, sugar, salt, and yeast in processor and run for about 20 seconds, or until blended.

    With machine running, slowly add the warm liquid through feed tube in a steady stream, only as fast as flour absorbs it. Continue processing until dough cleans inside of work bowl and forms a ball. Then let machine run for 60 seconds to knead dough.

    Place dough in oiled bowl, turning to grease top. Cover with wax paper sprayed with cooking spray (or use a kitchen towel dusted with flour). Let rise until double, about 1 to 1 1/2 hours. Punch down and turn out on floured surface. Cover with towel and let rest for 15 minutes. Shape into loaf and place in greased pan. Cover and let raise again.


    Preheat oven to 375 and bake 25 to 30 minutes. Remove loaf from pan and place on wire rack to cool, first brushing with melted butter, if desired.
