This is a bread I make very often...favorite of my grandchildren ... also one of the favorites of the Nuns ... Only problem is ....cannot bake it in the bread machine....grows too high...so just make the dough and then form it on a cookie sheet and it is the highest lightest loaf...
Cottage Cheese Bread
1/2 cup water
1 cup cottage cheese
2 Tblsp. butter or margarine
1 egg
1 Tblsp. white sugar
1/4 tsp. baking soda
1 tsp. salt
3 cups bread flour
2-1/2 tsp. active dry yeast
Add the ingredients to your bread machine in the order suggested by the manufacturer, and start. You can use up to 1/2 cup more bread flour if the dough seems too sticky.
I have altered this recipe every now and then....replace part of the flour with wheat flour and then add couple tablespoons of wheat gluten.
