    Spicy Carrot Cake

    Spicy Carrot Cake

    1½ cups oil
    2 cups sugar
    4 TBS. hot water
    2½ cups flour
    1½ tsp. soda
    1 tsp. salt
    4 egg yolks
    1 cup chopped pecans
    2-3 cups grated carrots (I use 3)
    2 tsp. cinnamon, or pumpkin pie spice.
    4 egg whites stiffly beaten
    1 TBS. butter flavoring
    1 tsp. lemon flavoring

    Combine oil, sugar, hot water, and egg yolks. Beat until light and fluffy. Add flavorings.mix.

    Sift dry ingredients and add to mix gradually. Fold in pecans, then carrots.

    Fold in the stiffly beaten egg whites.

    Pour into 3- 8 inch round pans.(greased and floured) Bake at 350º for 30 minutes.or till test done.Frost with cream cheese frosting.

    Frosting
    1- 8 oz. pkg. cream cheese, softened
    1 lb. powdered sugar
    4 TBS. butter
    1 tsp. orange flavoring.
