Jell-O Cookied
Jell-O Cookies: ( use sugar-free Jell-O for diabetics )
3/4 cup butter
1 cup sugar
1 (3oz.) size box Jell-O® (any flavor)
2 eggs
1 Tbsp. vanilla
3 cups flour
1 tsp. baking powder
1 tsp. salt
Preheat oven to 350° F.
In mixing bowl, cream sugar with butter, gelatin, eggs and vanilla mixing well. Add flour, baking powder, and salt, mix. Add to creamed mixture and mix well.
Roll into balls, and place on ungreased cookie sheet, about 1 1/2 inches apart. Flatten with glass dipped in sugar.
Bake at 350 degrees about 10 minutes. Cookie should not brown. Makes 4 dozen
