Banana Pudding

1½ cup sugar
1/3 cup. flour
¼ tsp. salt
3 cups milk
3 eggs,separated (room temperature)
1 tsp. vanilla extract
4-6 bananas
vanilla wafers (about 35-45)
1. Combine sugar,flour,salt,and egg yolks in heavy saucepan.mix well.Gradually stir in milk.
2. Bring to a boil, stirring constantly, mixture will thicken.Cook about 5 minutes.
3. Remove from heat; add vanilla.
4. Line a 1½ quart casserole with vanilla wafers.and sliced bananas.Pour ½ of pudding over this. Repeat with wafers and bananas.Pour remaining pudding on top.
5. Gradually add ¼ cup sugar and ½ tsp cream of tarter to egg whites,beat till stiff.Spread over top of pudding. Bake at 350º for 10 minutes.or until lightly browned.
