Chicken Pockets
Serves 5
Exchange= 2 meats, 1 starch, ½ fat
½ cup low-fat cheddar cheese
¼ cup chopped celery
2 Tbs.chopped onion
5 oz. can cooked chicken
1 can (tube) low-fat biscuits (10 count)
2 Tbs. light sour cream
1 chopped jalapeno pepper (optional)
1. Combine all ingredients escept biscuits and set aside.
2.Roll out each biscuit. Place about 2 Tbs. of chicken mixture in the center of each biscuit. Fold over and seal edges of biscuit.
3. Bake at 400º for 12 minutes, or until brown.
