Chicken and Rice-1 dish
List of Ingredients
2 boneless chicken breasts
2 cups water
½ cup brown rice
2 stalks celery diced
1 med. onion chopped
2 carrots cut in rings (about 1 cup)
1 can reduced fat cream of chicken soup
1 pkg. reduced fat cresent rolls.Recipe
Boil chicken until tender. Remove from pan and set aside. Chill broth and skim off fat from the top. Return to heat, and bring to a boil.Add celery and onion, simmer 10 minutes.
Add chicken and rice, simmer 10 minutes, add carrots simmer about another 10 minutes. Add cream of chicken soup and heat through.Pour into a 9x13 baking dish. top with cresent rolls and bake at 375º till rolls are brown.
