Overnight Breakfast Casserole
Overnight Breakfast Casserole:
4 slices reduced calorie whole wheat bread, cubed
2 ounces (about 2 slices) low-fat ham sliced into strips
2 ounces 2% cheddar cheese, shredded
1 cup frozen chopped broccoli,thawed and drained
1 cup fat-free egg substitute, (or 4 eggs)
2 cups skim milk
1 tsp. worchestershire sauce.
1 tsp. powdered mustard
½ tsp. curry powder (optional)
Coat a 9in. square nonstick pan with nonstick spray.
Spread the bread cubes over the bottom of the pan
Layer the ham, cheese and broccoli
In a med. bowl, beat egg substitute, milk, Worchestershire sauce, mustard, and curry.Pour over the cheese etc.
Cover and refrigerate overnight.
Bake uncovered at 350º until eggs are set. about 30 minutes.
Serves 4
Exchanges: 2 meat, 1 bread/starch, ½ vegetable, ½ milk, ½ fat.
** If eggs are used fat exchange will be 1 fat
