    Pineappple Carrot Cake

    List of Ingredients

    Cake:
    3 large eggs
    ½ cup lite butter, softened
    1 cup unsweetened pineapple juice
    2½ cups unbleached white flour
    1 tsp. baking soda
    2 tsp. baking powder
    1 tsp nutmeg
    1 tsp. cinnamon
    3 cups grated carrots
    Topping:
    1 cup crushed pineapple, well drained
    1 tsp. cinnamon

    Recipe

    Beat together the eggs, butter, and pineapple juice
    add flour, baking soda,baking powder, and spices. Beat well.
    Stir in grated carrots, and mix well.
    Spread batter in greased 9x13 baking pan.
    Toss topping ingredients together and sprinkle over batter.
    Bake at 350º for 25-30 minutes, or until browned.
    Cool on wire rack

    Serves 8
