List of Ingredients
- 2½ cups pepperidge Farm herb stuffing mix
- 1 TBsp.margarine, melted
- 1 lb. lean ground beef
- 1 med onion chopped (about ½ cup)
- 1 -15 oz can whole tomatoes, cut up
- 1-8 oz. can whole kernel corn, drained
- 2 med greenand/ or red peppers, cut lengthwise into quarters
Instructions
- Mix ¼ cup stuffing mix with margarine;Set aside
- in med skillet,over med.high heat cook beefand onion until browned..pour off any fat
- Stir in undrained tomatoes and corn.Add remaining stuffing. Mix lightly.
- Arrange peppers in a 2 quart casserole. spoon beef mixture over peppers.
- Cover and bake 25 minutes. Sprinkle with reserved stuffing. bake 5 minutes more or till peppersare tender.
