Broccoli Quiche
Low-Fat Broccoli Quiche:
1 (9 inch) pie crust
1 cup chopped broccoli
1/2 chopped onion
1/2 chopped mushrooms
2 whole eggs
2 egg whites
1 tsp. parsley
1/4 tsp.black pepper
1/4 tsp.salt
3/4 cup non-fat milk
3/4 cup low-fat Swiss or Mozzarella cheese, grated
2 Tbsp. flour
Preheat oven to 400º. Bake pie crust for 5 minutes. Remove from oven and set aside Decrease oven temperature to 350º
Combine whole eggs and egg whites and beat together. Add chopped broccoli, onions, mushrooms, salt, pepper, and parsley. stir together gently. Add milk, cheese, and flour. Stir well so no clumps
form. Pour egg mixture into warm pie crust.
Bake 35-40 minutes or until knife inserted in center comes out clean.
Exchange = 1 meat,1 bread/starch, 1/2 vegetable,1 fat
serves 6
