    Quick Pasta with Veggie Sauce

    1 green pepper, julienne
    1 cup shredded carrots
    chicken broth
    1 tsp. minced garlic
    1-15 oz. can diced tomatoes, flavored with basil and garlic
    2 TBS.fat-free cream cheese
    4 cups cooked tri-colored corkscrew pasta



    Heat ¼ cup chicken broth over medium heat in a skillet with the garlic.
    Add the green pepper and carrots.
    simmer, stirring frequently, and adding more broth as needed for about five minuted., or till veggies are tender.
    Add tomatoes with juices. Stir in cream cheese to thicken.Simmer for two minutes.Toss in the cooked pasta. continue to cook till heated through.


    Serves 3-4
    Exchange: 2 vegetables, 2 bread/starch
