    Beans & Rice Salad-suitable for diabetic

    2 cups cooked rice
    2 cups cooked black beans, drained
    2 cups chopped bell pepper ( any color)
    1 cup sliced celery
    1 cup diced tomatoes
    ½ cup sliced red onion
    ½ cup chopped cilantro
    ¾ cup salsa or picante sauce
    1 lime (juice)
    1 tsp. salt

    1.In a large bowl, combine rice, beans, peppers, celery,
    onion, and cilantro.Toss.

    2.In a small bowl, combine the remaining ingredients, mixing well. Pour dressing mixture over rice mixture. Mix well. Chill at least 2 hours or over night.

    Serves 12
    Serving size; about ¾ cup
    Exchange= 1 bread/starch, ¼ vegetable
