Mexican Meatball Soup
Meatballs: Combine and shape into 1" balls
1 # ground round
2 large eggs
1 sm jar diced pimiento, drained
1/2 C chopped fresh cilantro
2 cloves garlic, minced
1/2 tsp cumin
1/2 tsp salt - Dash pepper
Soup:
4 cans beef broth
1 tsp hot sauce
2 med carrots, diced
2 med zucchini, diced
2 med tomatoes, diced
1 med onion, chopped
1 med green bell pepper, chopped
3 C cabbage, shredded
Bring broth and hot sauce to boil. Add meatballs, a few at a time. Reduce heat and skim foam from top.
Add vegetables (except cabbage) and simmer 25 minutes. Stir in cabbage and cook 5 minutes more or until cabbage is tender.
