Tater Dipped Veggies
1 cup instant potato flakes
1/3 cup grated parmesan cheese
1/2 tsp. celery salt
1/4 tsp. garlic powder
1/4 cup butter or margarine melted and cooled
2 eggs, beaten
4-5 cups fresh bite size vegetables.mushrooms,peppers, broccoli, cauliflower, zucchini, and carrots.
Ranch salad dressing, or dip
In a bowl combine first 5 ingredients.Dip pieces of vegetable, one at a time into egg, then into potato mixture; coat well. Place on ungreased baking sheet. Bake at 400º 20-25 minutes. Serve with dressing or dip.
Yield: 8 servings
