    Recipe Introduction

Peanut butter is the one thing I probably miss the most on WW. I simply will not spend the points for it. I will however enjoy it in a recipe such as this one.

    List of Ingredients

    1 1/3 c. flour plus 1/3 c. whole wheat flour
    3/4c. reduce fat peanut butter
    3/4c. light brown sugar
    1/2 c. granulated sugar
    1/2 c. light stick butter
    1/3 c. fat free milk
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
1 1/2c. quick cooking rolled oats
    2 large eggs
    1 teaspoon vanilla extract

    Icing
3 tablespoons reduced fat peanut butter
1 1/2 tablespoons light stick butter
    2/3 c. confectioners sugar
    1 tablespoon fat free milk

    Recipe

Preheat oven to 350. Line 9x13 inch baking pan with foil; spray the foil with non-stick spray.
Whisk the flour, baking powder, baking soda, salt, and oats in bowl
With an electric mixer beat the peanut butter, brown sugar, sugar, and butter until well mixed. Add the eggs, beat well and then add vanilla. Beat well.
At low speed add 1/2 of the milk repeat adding the flour mixture and then the rest of the milk until well mixed. Transfer to pan, bake at 350 for 30 minutes.

    For icing:
Combine peanut butter and butter in microwavable bowl. Microwave on high until butter is melted. Whisk until smooth, add confectioner's sugar and milk, whisk until smooth. Spread immediately over the hot cake and then cool completely.
    Makes 24 bars
