Recipe Introduction
This recipe is the reason I decided that I needed to create a recipe database. I spent most of today trying to find the old recipe card (or receipt) that my grandmother sent to me years ago. I finally gave up and sent my mother an e-mail...here is the result. They are a lot of work, but worth it. As a child, I couldn't get enough. My grandmother made a wonderful raisin filling. I've lost that too...but have included my mother's version. I'll update with the old one if it shows up. Other pie fillings can be substituted.
List of Ingredients
Crust:
1 1/2 cup all purpouse flour (White Lily works really well)
1 1/2 cup self-rising flour
1 T sugar
1/2 t salt
2/3 C Crisco
1 12 oz can of evaporated milk
Filling:
1 1/2 C raisins
1 1/2 C boiling water
1 T flour
1/2 C sugar
Recipe
To make crust, sift together first 5 ingredients. Cut in Crisco. Add evaporated milk and mix well. Chill for at least 2 hours. (My mother recommends over night). Use a small saucer as a template. Put a large spoonful of filling in the middle and fold pastry in half. Flute edges together and seal with fork. Fry in crisco oil. Drain well.
To make filling:
Cook raisins in boiling water until plump. Add flour and sugar and cook until it thickens (usually 2-3 minutes are enough). Let cool slightly.
