Aunt Easter's Chicken-Rice Casserole

List of Ingredients
- 1/2 cup margarine or butter
- 3/4 tsp salt
- 1/3 cup flour
- 1/8 tsp pepper
- 1 1/2 cup milk
- 2 cups cut-up cooked chicken
- 1 1/2 cups cooked white or wild rice
- 1 cup chicken broth
- 1/3 cup chopped green bell pepper
- 1/4 cup slivered almonds
- 1 T chopped pimento
- 1 can (4 oz) mushroom stems and pieces, drained
Instructions
- Heat oven to 350. Heat margarine in a 2 quart saucepan. Stir in flour, salt and pepper. Cook over medium heat until smooth and bubbly, stirring constantly. Boil and stir 1 minute.
- Stir in remaining ingredients and pour into an ungreased 2 quart casserole dish. Bake uncovered 45 minutes or until bubbly.
