West Virginia Baked Beans

Recipe Introduction
This is another attempt at using local produce to improve a classic recipe. My husband prefers it to regular Boston Baked Beans
List of Ingredients
- 2 cups yellow eyed beans
- 1 yellow onion, chopped
- 1/2 lb local bacon (I use Sandy Hill Farms bacon) chopped
- 6 Tablespoons local sorghum
- 1 tsp dry mustard
- 1 tsp salt
- 1/4 tsp pepper (or to taste)
Instructions
- Soak beans for 1-2 hours. Drain and simmer in water for 20 minutes. Drain again.
- Place 1/3 of beans in a dutch oven. Add 1/3 of onions and 1/3 of bacon. Repeat until everything is used up.
- Mix remainder of ingredients with at least 1 cup hot water and cover oven.
- Bake in a 300 degree oven for 4 hours (more if oven is slow). Occasionally check water levels so beans don't dry out. Stir once or twice during the 4 hours.
